Yes! With the exception of our challah and our ciabatta/italian/focaccia all of our breads (even the baguettes!) are sourdoughs. Sourdough refers to the leavening process, meaning a natural sourdough starter, rather than commercial yeast, is used to rise the breads. Our breads are also unique because of the high water to flour ratio we use (hydration), making for an exceptional crusty exterior and chewy interior. Our breads are naturally cold risen for 24 hours, and contain only flour, water, sourdough starter, and any added seeds or nuts. Many individuals with gluten insensitivity can successfully eat sourdough breads, and sourdoughs are also more nutritious than a yeast-based, store-bought bread.
